This is such a useful little smoothie recipe if you're running low on fresh or frozen fruit. Simple ingredients and tofu is one of those things I try to have a pack of in the cupboard to mess about with.
I read so many confusing things about soy and tofu online - some good: Jo Lewin, Associate Nutritionist on BBC Good Food says that it's an excellent source of amino acids, iron, calcium and other micro-nutrients. The Association of UK Dieticians also has this great sheet about soy benefits. Some bad: scare stories like this headline claiming soy products "reduce sperm count" in men.
Laura Thomas PhD's article on soy on Huffington Post is a great middle ground on the research on soy, have a read here. As with everything - check your research (some of those tests on male sexual development have only been proven in rats) and eat in moderation: nothing is a 'miracle' ingredient!

- Silken tofu
- 1 frozen banana
- 1/2 tsp cinnamon
- 1 tbsp coconut almond butter
- 30ml almond milk, coconut water or just water!
1. Place all ingredients into a nutribullet or food processor and blitz to combine! I served with pomegranate seeds and freeze dried raspberries.
