I love me a dip. I think I've mentioned in a previous blog post that I am Queen of Dips among my friends. As far as I am concerned no social gathering cannot be improved with a good selection of dips and a massive selection of crunchy veg. Or crisps if you're feeling a bit more indulgent.
This pesto is dairy free, as there's no cheese in it. And it also works brilliantly on pizza or stirred through pasta. Yeast free friendly pizza recipe coming to the blog soon!
SERVES: Makes a good bowl full!
PREP TIME: 10 minutes
COOK TIME: 0 minutes
- 1 small head broccoli broken up
- Handful spinach
- 15 leaves fresh basil
- 2 cloves garlic
- Juice 1/2 lemon
- 75g (1/2 cup) organic walnuts
- 60ml (1/4 cup) olive oil
- 2 tbsp water
- Salt and pepper to taste
1. Put all the ingredients in a food processor and blitz until combined.
2. Season to taste and adjust accordingly. I am always tinkering! Bit of extra oil, or lemon, or basil are absolutely welcome to get this just as you like it.
