In typical Vicky fashion I have chosen yet another completely un-seasonal recipe to feature on the blog this week!
So bank this one ladies and gents for the autumn, or if you are in the Southern Hemisphere and aren't getting the lovely wafts of warm spring / summer air currently drifting through my balcony door then this is one for you right now. Or actually it would be totally amazing over ice and remind you of that favourite of winter puds...
Apple pie is a classic set of flavours and now I think about it maybe I would call this an apple crumble smoothie, because with oats rather than pastry that's exactly what we've got here blitzed together.
I had to experiment a bit with the recipe to get the consistency right. In my opinion you want your smoothie pretty thick and creamy if it's going to give you the right throw-back feeling. So not too much liquid and a really generous scoop of oats gets you just the right results.
Play around with your spices to taste. Cloves and cinnamon I always find can be really overpowering (something I talked about before when making my spiced pumpkin smoothie), so remember to add them really gradually. You can always sprinkle more on later.

- 3 large red apples cored and cut into chunks
- 1 frozen banana
- 4 tbsp oats
- 1/2 cup (120ml) coconut milk
- 1/3 cup (80ml) unsweetened almond milk
- 1 tbsp almond butter
- 1 tsp ground cinnamon
- pinch of ground nutmeg
- pinch of ground ginger
- tiny pinch of ground cloves
- crushed almonds and slices of apple to serve
1. Blitz all ingredients together in a Nutribullet or other food processor until smooth. Adjust the spices to taste if needed.
2. Serve and enjoy!
