Winter just doesn't quite want to leave us this month. As March approaches we're set here in Ireland as well as the UK for plummeting temperatures that will make it colder than in the Alps or at the North Pole apparently! My creamy cashew pasta was such a hit earlier this year on the blog that I'm glad I've got another opportunity to show you how versatile an ingredient cashew sauce is. The creaminess it adds to this dish really completes it.

Cream sauces have always been my downfall, I am a total sucker for them. I'm not saying you should never eat a dairy, creamy sauce if that's what you fancy once in a while. But if you're like me and love a rich creamy sauce, but would rather do it dairy free when you're cooking at home then this is the perfect recipe for you.

When I posted pictures of this recipe on my Instagram Story I got several people asking how to make the tahini dressing. It's the classic thing of having something in the cupboard that you only use for one dish and then don't know what to do with the rest of the jar. This is a brilliant way to use it and the dressing is so versatile.
